For the longest time I stopped doing much baking at all, because I had a horrid old half-sized oven that couldn’t keep a consistant temperature and took an hour to warm up.
I have a wonderful gas oven which I LOVE now, so I find myself baking again. I went in search of a peanut butter cookie recipe to try out tonight, and stumbled upon a cool looking website called The Baker’s Nuts. There appears to be a ton of super yummy looking recipes on here!
I opted to try out The Best Peanut Butter Cookies. Yeah, yeah, it seems like every second peanut butter cookie recipe out there is called this but rarely do they perform. This recipe performs. Deliciously!
My mods: I added 3/4 cup of mini Chipits (I was complaining to my father-in-law that the chocolate chips always fall out of my peanut butter chocolate chip cookies, and he told me that the secret is using mini chocolate chips – and it worked too!) and a scant 1/4 cup of extra flour. I also didn’t refrigerate the dough at all, and I did all my blending by mixer (I didn’t fold in the flour, like the recipe specifies).
I also whipped my butter and sugar until they were fluffy. And, I’d do it all again!! Mwahahahaha!!! I’m such a rule breaker. LOL!
Seriously though, if you want a kick ass peanut butter cookie that delivers on it’s promise to be more salty than sweet, try this one.
